In the kitchen of a modest tavern, a woman with wrinkled hands rolls out dough. Empanada. Not just any empanada, but one that smells of the sea: filled with squid and a pinch of pimentón. Outside, the evening air is filled with the scent of grilled octopus, olive oil hissing on cast iron, and the hum of voices mingling with the sound of clinking glasses of Albariño.




Vineyards climb the slopes surrounding Valga, their roots deep in the salty earth. Rías Baixas is not just a region, it is a flavor: fresh, mineral, with a hint of citrus. Local winemakers speak slowly about their vineyards, about the mist that lingers between the vines in the morning, about how the ocean adds something intangible to their harvest.
